Strawberry & Blueberry Muffins
Sometimes you’ve got to have a baked treat and we’ve got the mixture for you. You won’t believe how easy these muffins are to make; whip them up in just 20 minutes.

Directions
- Preheat the oven to 400°F
- Mix all the dry ingredients together in a food processor, or by hand.
- Add all the wet ingredients and mix well into a smooth batter.
- Fold in the blueberries.
- Spoon the mixture into a non-stick muffin tray. Spray with a few sprays of oil to prevent the muffins sticking if you prefer not to use muffin tins.
- Bake for 11-12 minutes and leave to cool, in the tray, for 15 minutes before placing them onto a wire rack to fully cool.

- 1 cup flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ cup SlimFast Original Strawberries & Cream Shake Mix
- 1 tsp cinnamon
- 1/8 tsp salt
- 2 large egg white
- 1 tbsp olive oil
- 4 ½ oz fat-free plain Greek yogurt
- 3 oz skim milk
- 3 tbsp honey
- 2 tsp vanilla extract
- ¾ cup fresh blueberries
