Strawberries & Feta Sweet Potato Toast

This delicious snack is so easy to make! With just a drizzle of balsamic glaze you can bring out the flavors of the perfectly sweet strawberries and tangy feta atop a sweet potato toast to enjoy this new twist on a bruschetta classic.

Directions

  1. Cut your sweet potato into ¼ inch slices. Take one slice and store the rest in the freezer for later.
  2. Toast your potato slice in a toaster on medium heat. Push lever down twice for a crispier toast. If making in the oven, preheat to 400 F and bake for ten minutes.
  3. Top your toast with balsamic glaze, strawberries & feta and enjoy!
