Directions
- In a small mixing bowl combine Dijon mustard, MCT oil, salt, pepper, onion and garlic powder and set aside.
- For each serving combine 1 cup spinach and ¼ cup pumpkin and top with ½ ounce of walnuts.
- Drizzle Dijon dressing over salad and enjoy!
