Sweet Potato Black Bean Burgers
A smart rendition of the traditional backyard BBQ staple, these burgers sub sweet potatoes and “superfood” black beans making them a perfect go-to. Top with a tasty avocado mayo.

Directions
- Preheat oven to 425 F. Peel and dice sweet potato and boil on stove until soft; approx. 12 minutes.
- In a food processor, add black beans, corn, breadcrumbs, egg, cilantro, salt, black pepper, and garlic powder. Pulse until cilantro is finely chopped.
- Transfer mixture to a bowl. In a separate bowl, mash sweet potato and add to mixture. Gently fold until fully incorporated.
- In a separate bowl combine mayonnaise, celery salt, and paprika with 3 avocados, mash and whip up until smooth and combined. Cover with plastic wrap and refrigerate until you are ready to assemble your dinner.
- Using your hands, divide mixture evenly into 6 medium sized patties and lay out on lightly oiled baking sheet.
- Bake for 6 mins on one side, carefully flip over, then bake for 5 more minutes on the other side. Place between lightly toasted whole wheat hamburger buns. Top with avocado mayo, guacamole, fresh spinach, and shredded carrots. Enjoy!

- ½ cup corn, cooked
- 1 egg
- ½ cup cilantro, chopped and lightly packed
- 1 ½ medium sweet potato
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp ground black pepper
- 1 cup panko breadcrumbs
- 3 medium avocados
- 3 tbsp mayonnaise
- ½ tsp paprika
- ½ tsp celery salt
- 1 cup spinach
- ½ cup matchstick carrots
- 6 tbsp guacamole
- ½ cup red onion, sliced thin
- 6 whole wheat hamburger buns
- 18 oz. baked french fries
