Sweet Potato Toast Base
When it comes to snacks, sweet potatoes are our bread & butter. Why you ask? They lend a sweet & subtle flavor as a “toast” base for a breakfast sunny-side up egg – or bed on which to serve your most savory pesto.

- Cut your sweet potato into ¼ inch slices. Take one slice and store the rest in the freezer for later.
- Toast your potato slice in a toaster on medium heat. Push lever down twice for a crispier toast. If making in the oven, preheat to 400 F and bake for ten minutes.
- Top your toast with either the sunny-side up, pesto, strawberries & feta, caprese or avocado ingredients and enjoy!
